Well, I burned an entire pot of pepper jack fajita soup. It was awful, so we scrounged around for various things. So my plans for lunch tomorrow are up in the air as I was going to have leftover soup.

I made lentil soup tonight, fast food style

1 lbs lentils, raw
4 cups broth (organic, but store bought, so WAY less flavor than homemade)
4 cups water
4 carros
1 cup frozen onions
spices

I turn the IP on saute while I am gathering ingredients, so it hardly takes any time to come to pressure as the liquid is already hot. 10 minutes in IP. Quick release. So whole meal was done in 25 min?

Pureed half in Vitamix, added back to pot.

I made “good grub” from the THT cookbook. It was delicious! Roasted green beans on the side.

It did come out saltier than we prefer. In the future I will use less of the creole seasoning, or look for a lower sodium version.

I usually plan my dinners out well, but we have wildfires less than 2 miles from our house so I couldn't get to the market. I pulled stuff out of the freezer and was able to make Kielbasa and Shrimp Fried Rice....it was a surprising hit!

I made ground beef veggie stir fry with cashews over rice. I wanted to serve a side, but I haven't been to the grocery store this week and couldn't find a single suitable thing. I have a feeling the grocery bill might be high this week.
