I'm glad to find this thread! I gave up on my Christmas morning casserole years ago since once of my kids has an egg allergy and the other two didn't really like it.

This year I'm baking it for a different group. My church hosts a group of about 15 homeless people for dinner/overnight/breakfast/bag lunch twice a week (shelter overflow) and I thought this might be a nice dish for dinner the day after Christmas. I've never tried it with hash browns and that sounds great. I hope it will go over well...to me it's comfort food since my mom always made it on Christmas morning.

Baked frittata

4 baked potatoes (I make extra and plan on them for dinner the night before, we love to make potatoes with hamburger bbq and fried onions on top )
A package of bacon
A bunch of kale
Sweet onions
Garlic
12eggs
Tsp salt
A dash of pepper

Slice up baked potatoes and lay in bottom of greased casserole dish

Cook bacon and crumble

Slice and saute onions in bacon fat until caramelized
Press 1-2 cloves garlic add to well whipped eggs

Layer bacon, onions, and kale on top of potatoes and pour eggs over top. Bake at 350 for 40minutes

I threw together a breakfast version of tater-tot casserole a few times. I put either cooked bacon or ham in with tater tots, tomatoes, spinach, and cheese. Could also add sauteed onions & jalapenos. Bake according to tater tot directions.

I made the hash brown one again. Here are my measurements for a 9x13 pan.

9 eggs
1 1/3 cups milk
8 oz grated Mexican blend cheese
1 lb sausage, crumbled
about 1/2 bag of refrigerated hashbrowns
1 1/2 teaspoon salt
1 teaspoon dry mustard

1. Spray 9x13 baking dish with oil and then line with hash browns.
2. Sprinkle hash browns with crumbled sausage.
3. Mix together eggs, milk, salt, pepper, and dry mustard.
4. Pour over meat and hash browns.
5. Top with grated cheese.
6. Refrigerate over night.
7. Cook at 350 degrees for 45 minutes to 1 hour.

this is so good and reheats so well, that I'm thinking of making one or two on Sundays to have for breakfasts throughout the week.
