need vegetarian dish for party
We're having some of dh's coworkers over for a party this weekend. One is Hindu & vegetarian. I want to be sure to make something that she can eat. She is bringing a cheesecake so I am guessing dairy is okay (she told dh no eggs), but just in case dairy isn't acceptable I would like something that is "true" vegetarian. Simple, too.
I am going to have a regular salad of some sort, so just greens, tomatoes, cucumbers, maybe some onion. What kinds of dressing would be vegetarian? |

Any vinaigrette is vegetarian (just oil, vinegar, and spices). You could even make a dijon mustard vinaigretted or cranberry or strawberry vinaigrette if you wanna get fancy.

You could do a balsamic or red wine vinegar dressing. As long as it wasn't creamy or contained cheese (parmesan is common in bottled dressings) it would be fine.
My favourite dressing is: 1/4 cup red wine vinegar 1/4 cup olive oil 2 tbsp miced red onion 1 tbsp dijon mustard Dash of salt Fresh black pepper Put it all in a glass jar and mix it like crazy for a minute As for a main course..what about some kind of pasta dish? Or a vegan chilli?

bean dip (black beans, some tomato paste, cumin, chili powder, etc.) - pureed and served with tortilla chips

I'm not clear what you're asking . . . do you need a vegan main dish or a side dish? Is this a potluck, or are you providing all the food (except cheesecake?) Are you doing finger foods only, or is this a sit-down dinner?
