I made this Simplest Zucchini Parmesan Pasta once this summer and we loved it!

passthemanna - we like stuffed zucchini. Cut in half lengthwise. Scrape out seeds. Mix ground sausage, egg, breadcrumbs & parmesan cheese. Stuff the zucchini. Bake at 350 for 20-30 minutes, until squash is soft & sausage is cooked. My kids love it!

Tonight is the lasagna I didn't make last week. 1 beef and 1 spinach and mushrooms. In addition to the cottage cheese I had to buy more spinach and mushrooms since we ate all previous. I still have the rest of the ing. DD has a game so I need to start making as soon as I get home for ds, dh and I. Not sure if she will want to eat it right before a game but she can have it later.

I seem to have put a lot of chicken on the menu this week. Last night was Mexican style chicken traybake, tonight is baked gnocchi with chicken and chorizo, and tomorrow (which I've just realised is the last day of the month!) will be chicken chasseur.
