this is a perennial favorite at our house. I used canned chickpeas to make it quicker.
Hot Sour Chickpeas 12 ounces dry chickpeas 4 tablespoons vegetable oil 2 onions, finely chopped 8 ounces tomatoes, finely chopped 1 tablespoon ground coriander 1 tablespoon ground cumin 1 teaspoon ground fenugreek 1 teaspoon ground cinnamon 2 green chili, seeded and finely sliced 1 inch fresh ginger, grated 1/4 cup lemon juice 1 tablespoon chopped fresh cilantro salt 1. Cook chickpeas. Reserve 12 ounces of cooking liquid. 2. Heat oil. Reserve 2 tablespoons of onion, frying remainder over moderate hear for 4-5 minutes, stirring frequently, until tinged with brown. 3. Add tomatoes and continue cooking over moderately low heat for 5-6 minutes unil soft. Stir frequently. Stir in corinder, cumin, fenugreek, and cinnamon. Cook 30 seconds, and then add chickpeas and 12 ounces of reserved cooking liquid. Season with salt, cover and simmer gently for about 15-20 minutes. 4. Mix reserved onion with chili, ginger and lemon juice. 5. Stir in onion mixture and cilantro just before serving. Season with salt. Servings: 4 |

Cold black bean & corn salad - equivalent of 2 cans rinsed & drained black beans about 4 ears of fresh corn - corn cut off cob.Then diced pieces of tomato 2-4ish,some green onion diced,diced green or red pepper(or jalapeno if want it really spicy) if you like,can put in avocado as well but keep sep. so if leftovers avocado wont turn brown & mushy,cilantro if you like that and then make a dressing out of cayenne pepper,sea salt,olive oil,lime juice and minced garlic and mix well with it all. Eat with corn chips.My family loves this so much.I have a recipe someplace but am not much of a recipe person. Also a quick and easy meal my family loves is to take a couple cans of black beans & simmer on stove with salt,pepper and some onion and I add about 2 Tblspoons of balsamic vinegar but you dont have to.I cut up fresh green pepper and serve on top cold but you could simmer with the beans if you prefer it cooked.Serve over brown or jasmine rice.

Homemade hummus is awesome
I just put a can of garbanzo beans in the food processor or blender, some lime juice, fresh garlic and sesame seed if I don't have tehina. On pita or with falafel or even just with fresh green bell pepper or carrots for dipping. Black bean burgers - black beans in teh food processor or blender, garlic, onion, an egg and some bread crumbs or saltines. Blend like you would for meatloaf , make patties and grill or bake or even fry Black bean corn salad - black beans, corn, diced tomatoes, garlic and onion. Chop mix leave in fridge overnight in a tupperware. MMMMMmmmm Lentil soup - cut up an onion and a carrot and sautee in abt a tbsp of vegetable oil In a pot get 4 cups of veg broth or any broth really going and add 1 cup dry lentils . add pepper, some thyme, bay leaves if you have them I have tons |

Bean Dip
1 head Garlic 1-¼ teaspoon Olive Oil, Divided 1 can (15.8 Oz. Can) Northern Beans (or Cannellini) ¼ cups Fresh Cilantro Leaves, Loosely Packed ¼ teaspoons Salt ¼ teaspoons Pepper Preheat oven to 400°F. Peel most of the papery skin off of the head of garlic. Cut the top off of the garlic head to reveal individual cloves. Drizzle about 1 teaspoon of olive oil over garlic, lightly coating garlic all over. Wrap garlic in aluminum foil, or use a garlic roaster (or make your own), and bake in the oven for 45 minutes. While garlic is roasting, warm beans in a small pan on low. When garlic is finished roasting, let cool to the touch. In a food processor, combine the warm beans, cilantro, salt, pepper and roasted garlic cloves until smooth.
