Tostada shells topped with shredded taco-seasoned chicken, spicy refried beans, cheese, lettuce, black olives, salsa, and sour cream, with Mexican rice on the side and strawberry sorbet for dessert.
The chicken is so easy. I put however many chicken breasts I want (4-6 small ones usually), a can of rotel, and a packet of gf taco seasoning all in the slow cooker and cook it on high for half of a day. Then I shred it with two forks and serve.

Spanish rice casserole- so easy... cooked ground beef, cooked Spanish rice, corn, black beans, chopped sautéed onions, taco seasoning. Mixed and threw into casserole dish. Sprinkled with cheese. Cooked at 350 until cheese bubbled. Served with sour cream and guacamole with chips, salsa, and side salad.

First day home from summer vacation today so I had to shop this morning to resolve the crazily empty fridge! Now fully stocked tho. :whew Also one of the kids picked up the start of a virus from a cousin so I made an immune boosting chicken veggie soup for dinner with homemade bone broth.

Last night we had spaghetti, meat sauce, side salad, and fresh cherries.
