Re: Silicone baking mats vs parchment paper
I didn't know there was biodegradable parchment paper! I Love it so much, like someone mentioned earlier gluten free baking is so much stickier and then also I can't have eggs so everything is much more delicate and finicky. I'm going to look into that good silicone brand and try theirs.

Re: Silicone baking mats vs parchment paper
I use silicone muffin pans. My GF recipes pop right out.

Do you have a brand you love? I really need to get some.

Re: Silicone baking mats vs parchment paper
Here's an interesting discussion on parchment vs. silicone
https://www.debralynndadd.com/q-a/si...rchment-paper/ According to her, the silicone mats are much less expensive overall! I agree that it matters what brand you buy. I do love my Silpat, but I find that the ones from Costco work just as well. I've also bought some cheap ones from Amazon, and they smelled terrible. I only use them for crafts now and I won't cook on those!

Re: Silicone baking mats vs parchment paper
The Costco ones look like a French knock-off of Silpat, which is also a French brand, I believe. At a fraction of the price, I'm tempted to get a set to try them out.
I totally agree that quality varies from brand to brand. I've had pans and liners that stink, stick, and hold onto smells and tastes. My Silpat is fantastic as is a gray tube pan I bought 15 years ago. (I have no idea what brand it is!) I love the muffin liners (The Boston Sweets) I bought on Amazon 2 years ago, but the rolling pin and mat mil bought me last year for Christmas got donated to the kid kitchen pretty quickly. The larger loaf pans, the Tupperware baking mat, another pan, all saw more use in the sandbox and the craft projects than kitchen. I bought a pan from Target (Trudeau Maison) for a friend that has a rigid frame so that it doesn't collapse and she really likes it.
