I showed my children 'The Story of Stuff' after finding the link through Joshua Becker's blog, becoming minimalist, which we have been following for a year now amongst other similar resources.

This week we also received an appeal letter about famine in east Africa, from Australian Lutheran world service.

So: one child suggested buying nothing for a long time, and i think we will do that and try only to buy used items except shoes and personal care items etc.

I have suggested we eat vegan one day a week and use it as a kind of family fast , and to the extent we save money we will donate to the appeal from our food budget.

Can anyone give me help planning a vegan day that makes sure we eat balanced meals but start to tread a little more lightly on the earth? I would like it to be a pretty sustainable habit for us to do this.

If you want more simple, rice and beans, nut butters, hummus, and avocado are my go-tos for protein and healthy fats. Most days I "cook" only one vegan meal; the rest of the time it's simple things like carrot sticks dipped in almond butter (breakfast), avocado on toast topped with tomato (lunch), and fruit, nuts, and veggies for snacks. Sometimes salsa and corn chips are an easy snack, too. Most of what I cook is Indian-inspired, which is full of flavor and veggies and protein (lots of lentils and chickpeas), and served over rice. Indian food is very easy to "veganize." Other easy meals are veggie fajitas and stir fry over rice. Eating vegan has helped me get away from the idea of "big meal" and centered me more on simplicity and sustainability.

Thank you!! We absolutely love Indian food, the curry dh made a few nights ago would be a brilliant vegan curry. We are already dairy free in our cooking for the children so the base of that wouldn't need to change. I am planning on sneaking more meals in here and there but organising a whole day is my first challenge. My own restrictions because of digestive system issues are that I can't eat nuts or seeds ( unless I have made them into a paste in my high powered blender). So I need to check out if I can eat chick peas if they are not in hummus which we make daily. They would be great in dh's curry.

Been reading all that and with my issues Going on health wise at the moment I'm thinking of going on that eating plan properly. Amazing organisation.

Vegan meal ideas:
Breakfast:
oatmeal topped with maple syrup, frozen blueberries, and nut butter
Peanut butter toast topped with sliced banana, cinnamon
Smoothies
Vegan muffins

Lunch/dinner:
Big salad with vinaigrette
Burritos or tacos with grilled or roasted veggies (zucchini, mushrooms, peppers, onions, potatoes, sweet potatoes), olives, rice and beans, lettuce, salsa, avocado
Curry and rice
Vegetarian chili and cornbread
Pasta with white beans and veg
Stir fry with edamame, cauliflower, broccoli, carrots, snow peas
Lentil soup
Minestrone soup with kale and chickpeas
Sandwiches - hummus, cucumber, sprouts, tomato, jarred roasted peppers
Quinoa with spinach, mushrooms, thyme, lemon, white wine
Spaghetti squash with tomatoes, garlic, mushrooms, artichokes, chopped olives, drizzle of olive oil and balsamic vinegar, spinach or kale,

For me, a big thing in adjusting to eating vegan is getting used to just plain eating more food if you're hungry, have seconds!
