Kefir GRAINS? Help!
My lovely friend gave me two JARS full of Kefir grains. Kefir is my faaavorite... the only reason I think I still consume dairy.
I watched youtube videos, read websites, asked her and still no conclusive answer to how I can *store* the grains. Should I really just always have a batch or two of Kefir brewing and will it truly stay good at room temp? TIA

You can eat some of those, give them away, compost them, etc. You don't need that many unless you have a family of 30, Keep 1 walnut-sized grain. Put it in 2-3 cups of milk at room temp for 24 hours. Shake well a few times a day, whenever you think about it. Scoop out the grain and put it in fresh milk. Repeat daily. The grain will grow and possibly split. You'll need to keep it at a reasonable size or else your kefir will brew in a few hours instead of 24 and could start tasting off. Yes, room temp forever if you like. I find my kefir grains become "off" when stored in the fridge. But if you go on vacation you can rest them in the fridge. If you want more, I recommend having 2 jars going instead of 1 big jar. Jmo.
