Just signed a 30 day pledge
To not eat meat.....should be ok....but could use some support.
I feel like my veg meals always leave me feeling hungry....like today... the meal had sweet potato tomatoes green pepper cream of mushroom soup onion and it was topped with organic stuffing I was hungry soon after....I guess I SUCK at cooking grains like rice, quinoa, and such.....they would fill me up more.

Where's the protein? I'm hungry just reading through the list, because those wouldn't fill me up long-term either.

Beans...I would have a salad first, too. My blood sugar is sensitive currently. It would have been wonky on that.
I find it helps to have some crunch in my meals. It does feel different to eat without meat especially if you Are not eating heavy Foods like eggs or cheese. I've found that when nursing, I've just needed to eat more often Good thing I love food Being hungry isn't a problem necessarily. Keep eating a healthy variety of foods and you'll be fine. The meal you described above sounded quite starchy, so my advice would be to make sure to add variety over the course of the day.

Ok....so see how clueless I am...
Protein.....I don't eat nuts in meals...nuts are a snack to me....or maybe I'll put walnuts on a salad so nuts in my dinner wont' work. I guess I would have to add quinoa , lentils, or rice but then is that starchy again? I do not have a meal plan. I am willing to make anything that does not contain tofu or soy products and/or cilantro or rosemary. I do need ideas. I get cookbooks and all the recipes have way to many ingredients. Stuff I don't have like tahini and tempeh etc. I am open to some very simple ideas to start with.

I'd recommend "The Vegetarian Mother's Cookbook: Whole Foods To Nourish Pregnant And Breastfeeding Women - And Their Families" by Cathe Olson. She has ways to go vegan too while nursing.

What does a normal week look like?
You know it isn't too starchy if you like that. You just need to realize you might feel hungry when you start until your body adjusts.

I am going to try to do this eventually. I think about it now and then...I did try once for two weeks, but only made it a few days before I accidently ate some meat. I should have just gotten back on the wagon.
Are you going vegan or just veg? What about green smoothies? Do you like those? They are pretty filling if you put mango or banana in them. Yogurt or milk can be added too, if you are eating dairy. Good luck! Oh, do you like lentils? I have a couple of really good lentil recipes that I think are filling and have lots of "stuff" in them so they taste really good. Let me know and I can post the recipes if you like.

Some meal ideas:
oatmeal: topped with blueberries, bananas, maple syrup or agave, cinnamon and walnuts cereal with nut-milk and sliced almonds peanut butter and banana on whole grain bread or rice cake homemade vegan muffins or pancakes green smoothies fresh fruit vegan soups: curry and dal minestrone with chickpeas and kale (no pasta) tomato "imagine" brand is organic and vegan or make your own from canned tomatoes lentil vegetable chowders made from a cashew base, like this recipe curry and dal lentil or chickpea taco filling - top with avocado, tomato, salsa, shredded lettuce cashew cream "alfredo" - from aerynne, she calls it "yum sauce" Quinoa taco salad Portobello "Steak" Sandwiches - I use this recipe but recplace the seitan with sliced portobellos Quinoa Stuffed Peppers Asian Noodle Salad Potato Kale enchiladas Mediterranean Pasta - leave out the tuna and add spinach, chickpeas, bell pepper, whatever sounds good pineapple cashew quinoa stirfry Snacks: Dried fuit - mmm, dried mango is the best trail mix chips with guacamole and salsa toast and peanut butter veggies and hummus celery and peanut butter green smoothies fresh fruit

I would love to see a meal plan with no soy in it! My boys usually will turn down meats except scrambled eggs. That is what has prompted going vegetarian. |

I love menu planning.
