Re: October's Dinners
We have three Blue Apron meals to choose from. I'm excited. I'm thinking the porkchops with mashed potatoes and maple glazed greens.

Re: October's Dinners
That is what I plan to try next. I'm guessing less broth using cooked rice?

Dh worked several really long days in a row (including today). I think he wants to order out.

Re: October's Dinners
I am going to try the chicken fajita soup again that I burned the daylights out of last week. I'm going to try a different method in hopes that it will help it not to burn so easily.

Re: October's Dinners
I’ve been on a soup kick this fall. A couple weeks ago I made potato soup.
Today I made Broccoli Cheddar My dh is gluten free, but doesn’t like soups, making soups with a rue and wheat flour hasn’t been a problem. Both soups will get made again. My 13 year old liked both the other kids

Re: October's Dinners
Butternut Squash Soup. Easy and good.
1 onion, 1 green pepper, 3 cloves garlic diced and sauteed in 1 T. butter or olive oil for a few minutes in soup pot. Then add 1 large squash, peeled and cubed. Add 1 can coconut milk, 3 cups water, 1 t. each turmeric, coriander, cumin (and the recipe called for 1 t. of cayenne which I cut to 1/2, but I'll leave it out altogether next time.) Simmer for 30 minutes, then puree with hand blender. Serve with sour cream and cilantro.

Re: October's Dinners
I've made French Onion soup for tonight (Although I added more pepper than the recipe I used) and I'm planning to do Pasta bake tomorrow.

Re: October's Dinners
I'm envious of all of you with your soups! It's supposed to be 95 here today!
I'm having an afternoon tea for my mom's 80th birthday today so I probably won't be making dinner. I spent ALL day yesterday baking.
