apples!!
I bought 50 pounds of apples today, they were nearly local and SUCH a good deal.
20 pounds of granny smith 30 pounds of ambrosias. At least 10 pounds will get eaten in the next 2 weeks. Any suggestions of what to do with the rest? I have freezer space. |

What sort of baked goods do you typically make for your family with apples? If you are an apple pie baker, I know you can easily make the filling in advance then freeze. Then when you want to bake a pie just dump the pre-made filling in a shell and bake.
Of course applesauce is an easy way to use up a literal ton of apples. You can can or freeze. The thing that we do most often with apples is overnight crock pot apple oatmeal. Which is just steel cut oatmeal with diced apple. So when apples are in season I just core, peel and chop and freeze in ziploc bags as is. No added sugar, ingredients, or work. Then when I want to make something like the oatmeal (or other baked goods would also work), it's just a matter of thawing a bag and dumping it in. Keeps us in affordable apples all winter long (apples can get $$$$ out of season as I'm sure you well know).

I might do some pie filling. Then I could do it lower sugar, and use it for crisps, pie, or oatmeal.
I LOVE eating apples on their own. But seriously at 59 cents a pound all weekend, I might need more. |

I was ecstatic to buy them from Whole Foods today at $0.99 pound; not local as I'm in the southern US. I only bought five pounds. The deal you got is awesome!!

I like to make apple pies, and freeze them for when needed. They can go straight from the freezer to baking if you don't preheat the oven.
Dried apples are also nice if you have or can borrow a peeler/slicer and dehydrator.

We mainly just eat apples like crazy when they're in season--our favorites, Cameos, tend to last a while. The other main thing we do is, we love apples on oatmeal pancakes. It's one of our go-to breakfasts for weekends, or when guests are here. We keep a homemade mix in the fridge and you just add milk, oil and eggs. Anyway, the best thing to top them with is not syrup, but peeled + diced apples, cooked and mixed with cinnamon. They juice up nicely and are so yummy. Granny Smiths are our fave for this, but they're expensive. So once a year when I can get GS or Mutsus (very similar) in bulk for cheap, DH and I have a big evening processing apples. He actually rigged up a way to attach his cordless drill to our apple corer-slicer-peeler --so he does that and then I slice them up into smaller pieces. We freeze them flat in gallon ziploc bags. Then when we want pancakes + apples, we can pull out a bag and microwave the apples. Quick and easy.
We've also been making applesauce lately and discovered it's quite delightful with some cranberries added. Something like 6-10 apples depending on size, half a bag of cranberries, a bunch of cinnamon, a bit of cloves, maybe some ginger. I don't peel the apples b/c we have a BlendTec, so I only remove core/stem and blend. Crockpot all day on low and your house smells amazing. No need to add sugar. I make apple butter the same way (minus the cranberries), I just let it go in the crockpot a lot longer. I never add sugar to it. Apple butter is also amazing on the oatmeal pancakes

Doesn't really help you to preserve them, but we love them sliced with honey and cinnamon or with thin slices of sharp of cheddar. I also like to saute sliced apples in butter with cinnamon and a tiny bit of sugar and serve them alongside an autumn dinner.
I'm thinking about trying a recipe like this soon: Apple Cinnamon Breakfast Risotto.

I make apple sauce out of the apple cores and the apples the toddler can't quite finish. I stick them in the freezer and when I have a bah full I will then cook them down and make sauce.
