That dip sounds good! I'll have to try it.
Tonight we had creamy salsa chicken tacos. Totally a made up recipe, tho it likely exists somewhere on the great world wide web. Took a package of boneless skinless chicken thighs and dumped in instant pot. Put some salsa on top. Pressure cooked for 10 minutes. Natural release. Removed chicken and shredded. Added lentils to the salsa juice, pressure cooked for 10 minutes. Added cream cheese and cottage cheese and let them melt to make a creamy consistency. Put the shredded chicken back in and voila! Served on soft corn shells (gluten free), with all the typical taco toppings as desired. Salads on the side.

I made the very veggie black bean soup for lunch that mamaKristin posted and it was sooooo good. I highly recommend it.
For supper we had tomato and sausage risotto and Greek salad.

I had leftover creamy shredded chicken so I made chicken nachos for dinner. Served with salad on the side.
Then rhubarb apple crisp for dessert. I love crisps so much! Super EASY and crazy easy to make gluten free.
