Thanks yes it's brilliant. I hate sandwiches so it's got to be creative. Not many (or any?) restaurants on this trip between destinations!

I started my own personal best yesterday morning, cutting up an entire watermelon and repackaging the takeaway boxes with diced watermelon for the trip home. I hate cutting up watermelon so doing an entire one in say 10 mins was a big achievement.

Sheet pan supper: chicken, cauliflower, carrots, red onion, and asparagus. I should have taken a pic because it was pretty! The chicken (boneless, skinless) came out nicely done, and the veggies were good too. It cooked for close to 35 minutes.
Last night we had meatball subs and roasted cabbage.

I feel like the ease of cooking that way and the nice variety of veggies makes up for any imperfections in timing. I used whole baby carrots (easy!) and they were the only thing that could have cooked a little longer. I cut the cauliflower pretty small. The chicken was actually a lot better than what I usually end up with on the stovetop (I'm always afraid I'll undercook and I end up drying it out). This seems sort of fail proof!

Funnily enough I realised the new recipe I tried last night was the same thing, it was just called something different mine was chicken drumsticks, potatoes and carrots.
