September's Dinners
Please share with us what you are having for dinner each day. If you have a recipe link to share that would great and we love drooling over pics.
Tonight I'm having company over. We will be having Baked Salsa Chicken, Mexican Rice, Slow Cooker Spicy Pinto Beans, Corn, Lettuce and Tomato Salad with Ranch, GF Brownies and Strawberries for dessert.

I've made it multiple times before and it's very good. I serve it over rice for the kids and over zucchini noodles for dh and I. (we do a lot of rice and zucchini noodles as my garden overfloweth with zucchini and the kids adore rice and it's simple and inexpensive).

We had a new Fresh Thyme open close to us yesterday, so we are having some of their sausages, roasted potatoes, and salad.
Tomorrow night we are having tacos with ground turkey from the freezer and guacamole. (Avocados were 50 cents a piece today!!) I also got some shrimp that was on sale big time today, so we will probably mix that with the spaghetti squash I got earlier this week and some chili type seasoning. I also got some bell peppers for 77 cents each today, so we will be doing oven fajitas at some point. My oldest daughter is learning about Eastern cultures this year in school, and we have been trying to have meals from those countries. She is currently studying Russia, so we had beef stroganoff and borscht over the last couple of weeks. Those were both really good.

Here's the final dinner product:
Sukuma Wiki (Kenyan Braised Collard Greens and Ground Beef), served over zucchini noodles. Side of curried carrots and onions. Every time I make this I remember how VERY VERY much I love love love it.

We had chicken chili that I loaded with veggies. They didn't notice the cauliflower, but my 6 year old did ask why there were "these green things" in it. (They were peas.) I told her, "Because I like them!" "Oh. Hmm." was the reply. Then she ate 3 bowls.

I love love love hiding nuggets of health in our food. I find great delight in it. Does that make me weird?
In fact, I have recently started making this amazing, creamy, purely delicious gravy that my kids fell MADLY in love with. They can't get enough. The secret? The main ingredient is navy beans. There's nothing bad in it. I encourage them to smother their food in as much gravy as they want.

Tonight was tortellini meatball soup with biscuits. I sort of combined this recipe and this recipe and somehow came up with something that absolutely everyone in the family loved. I'm still in shock over the number of times the kids told me they loved this soup. Shock.
