Tonight, we're celebrating my husband's birthday a few days late. Family is coming over and I have shepherd's pie cooking, a veggie tray prepped, and then I'll make croissants and fresh green beans cooked w/ bacon. I just finished making icing for the chocolate cake and that's dessert. Can't wait to eat...smells so good lol.

Brilliant isn't quite the right word for me in this case since there wasn't actually any cauliflower in the drawer when I went to get it out so it's broccoli, onions, and cherry tomatoes. (my 17 yo raved about how good tomatoes are roasted after having them at a restaurant, so I'm giving it a try...)

Oooh, how did you guys like the roasted tomatoes? I LOVE putting tomatoes in with roasted veggies. Super delicious. The only caveat is to make sure they've cooled enough! That liquid inside can get HOT HOT HOT. I've learned the hard way.

Roasting tomatoes does bring out a lot of flavor that's not there when they're raw. And yes, they're hot! I'm beginning to understand that there's no veggie I won't roast. Well, maybe not lettuce.

Sounds like a perfect autumn supper. Do you have a recipe?
Tonight I had a sheet pan supper fail. I don't think I'll include potatoes again since they took so much longer than everything else to cook, even though they were sliced rather thin. Plus I think I'm crowding my pan too much, but I have hungry folks to feed! Maybe I should spread things out onto two pans.
