cracking eggs without getting the shells in?
Is there a trick to this? I've been having so many problems with pieces of egg shell falling into the eggs. Doesn't matter what I crack the egg on. Does anyone have any tricks to keep this from happening?

No trick to keep it from happening, but a trick for easy removal. Use the big shell to scoop it out. The tiny pieces stick it, and it lifts right out.

How are you cracking? I don't have a trick but I rarely have shells fall in. are you getting a nice clear Crack of the shell when you hit it? If I hit it in a more blunt object and get a less clear straight Crack I am more likely to get shell remnants.

I don't know where I heard this first, but a trick is to crack it on a flat surface like the counter (as opposed to the bend or corner of the counter). I've been doing that for years and have rarely gotten shells in. I've also been teaching my five and seven year olds this trick as a part of life skills the last two weeks.

I always crack t on the bowl and rarely have shells. You need a firm crack to go all the way through and not have to use your fingers to open the egg.

If you crack on the rim of the bowl, you run a greater risk of forcing shell bits into the egg. A solid thwack on the counter should crack the egg almost completely around its equator. What I've been teaching my kids is to pull the shell apart, not to press into the crack or squeeze the egg because that causes splintering.
The other tip I discovered is that shells almost nearly always sink. If you pour off the eggs into another bowl, the shell bits will stick to the bottom of the first bowl.

I used to do the flat crack. Cheap eggs here have such a thick membrane and flaky shell that I get shell everywhere.

Ok, I will try the flat crack. The downside is that the egg is more likely to get all over the counter, rather than spilling into the bowl. But I'll be happy if the shell doesn't get in! I think I'm not getting a solid break, which is the problem. These aren't cheap eggs either, so I feel like it's user error!

I don't know what they are called, but my mom used to have a tiny egg "sieve" type thing. Perfect to catch your egg bits.

Well, rats! That wasn't supposed to be the result! I haven't googled yet, but maybe I should. It seems that there has to be some trick in getting a clean break on the shell. I think that's my problem. I'm not getting a clean break.
