This was my starting point. My kids used to love this so much, but I quit making it when I went gluten free, but I figured out I could easily sub gf flour and just not serve it with biscuits. I used diced potatoes, not hashbrowns, and upped the volume of the soup by adding more broth, adding more of the veggies called for in the recipe and adding some other veggies I had on hand. It is such a comforting soup.

We had zoodles with ground buffalo and pasta sauce tonight. The buffalo was on sale and cheaper than beef, and it was pretty good!

We had chicken cutlets with a lemon-parsley and caper sauce. Kale chips and salad on the side. (Dessert was blue jell-o layered with red jell-o and topped with a shark fin made from oranges. The littles were VERY excited about dessert. I don't usually do packaged stuff. )

DH is working late, so the kids asked for pancakes. (He doesn't like breakfast for dinner.)
