Please give me family meal ideas that fit our needs
I need some family meal ideas that fit these parameters:
Easy One Pot (or almost) Lots of veggies No grains in the main entree (the children can add a grain, but dh and I can not have grains at all right now) No legumes (I am intolerant) No dairy (the children and the husband can add dairy to there's, but it can't be in the main entree because I am intolerant). Main entree mostly low carb. Dh does not tolerate carbs in high quantities. Ugh, is this an impossibility? Right now I have a pot of "poor man's roast beef". It's ground beef with a bit of onion, chunks of carrots, pototoes, and green beans. The kids can have bread with butter with their. Dh and I will skip the bread. Dh will have to remove potatoes from his portion. He and I will eat a large green salad with ours. I would love other ideas. Obviously you can see we are not vegetarian, but we do have other limitations. |

I'd look for Paleo one pot dishes on Pinterest or Google if I were you, which is basically how you seem to be eating. Then I'd up the vegetables and reduce the meat a bit. That should fit your requirements

- Beef sweet potato spinach/chard hash with fried eggs on top, or is that too carby for your dh? We put walnts in ours, no fried egg(dd allergic) and serve with rice, but rice is optional.
- Asian stir fry beef or chicken and assorted veggies? - Beef stroganoff without rice and sour cream for main, but with spinach, onions, carrots, peas, etc. Without sour cream, it's probably kind of like the dish you said you were making though. Sent from my iPhone using Tapatalk

We eat pretty much the way you've described, although we do rice and potatoes.
I make a dairy-free beef stroganoff we like pretty well. It would work over potatoes, or your could make riced cauli since you don't do regular rice. Instead of the sour cream, we use the creamy part of coconut milk soured with lemon. Then I put in a spoonful of tomato paste to thicken it up a little. (The meat is seasoned with dijon mustard, garlic powder, salt, pepper, a little cayenne and a little red wine for flavor.) Stew meat with onion and garlic in the crockpot always goes over well here too. Soups? We like Zuppa Toscana with coconut milk instead of cream, but that does have potatoes in it as well. ETA: I guess many of our standard dishes don't have all the veggies right in them. I usually make sauteed spinach or steamed broccoli or green beans or salad to go on the side though.

We make this cabbage beef stirfry on a regular basis. I can get away with one pound of ground beef for 8-10 people.
And this chili is good, too.

I do soup a lot. Usually carrot, onion, broccoli or cauliflower, cabbage, celery, chicken, salt, pepper, dill, and a splash of lemon juice. Sometimes I add beets, radishes, butternut squash... whatever I have on-hand.

I'm making a similar cabbage beef dish right now. Except spiced with caraway, paprika and a tiny bit of clove instead of oregano/basil
Barbecue meat in the crock spreads out well through a few meals.
