Recipe of your fav grain free bread alternative?

I've been making flax seed muffins for dh and I (in the microwave) in a mug, and I wonder if there is a fav recipe that you ladies have to share.

I use a combination of tapioca, coconut, and almond flour depending on my recipes. I like the Chebe mixes (tapioca).

I make one that is the same recipe except it uses 1/2 cup of almond flour and 2 t. of oil.

I just tried this recipe for crepes, which kept me happy while the rest of the family ate regular pancakes:

I will try the almond flour, thanks! I make a similar pancake but with cottage cheese. I wonder if Greek yogurt would work in place of the cheese?

You can also make pancakes out of smooshed banana and an egg if you eat eggs.I wonder if there is a similar muffin recipe for regular or small ovens.We dont have a microwave

Love the banana idea. I think I might try just multiplying my recipe and baking them in the regular oven.

I also wonder if I can start with almonds, blend them in my blender to make my own flour, then add ingredient s d ght to the blender and pour into muffin tin and bake in oven or fry on griddle, depending on what I am making. I am just thinking out loud. Not sure if this would work.

For pasta replacement there are neat things to make spaghetti out of zuchinni and other vegies and you can also use thinly sliced salted and sweated zuchinni strips in place of lasagna noodles.I did that before and my family loved it
