Easy, portable lunches for me!
I basically work out of my car and I need big help with snacks and lunches. I ate too much fast food last week and I can feel it. I'm tired of ham/cheese sandwiches or cheese and ham and crackers. I typically eat while driving, so 1 handed foods are ideal.
I don't have access to a microwave so left overs is generally out (which is typically a favorite for me). I do have access to a few thermoses I can put hot stuff in in the am. Ideas?

Pre-cut veggies, dry fruit, nuts, smoothies, bagels, wraps, muffins (like the homemade, good for you kind )...

Tortilla roll-up, chef's salad, soup in the thermos, pasta salad?
Pulled meat, bbq meat, sloppy joe meat heated and put in the thermos, add to bun at lunchtime?

If you have a thermos, leftovers would totally work. I pack my kids leftovers in their thermoses regularly for lunch.
You can't go wrong with raw fruits and veggies. And the variety of what you can choose from is essentially endless. Also nuts and seeds. Cheese.

Pizza rolls- make a large rectangular pizza. Roll it up and cut like cinnamon rolls. Sprinkle more cheese on top and bake like cinnamon rolls. Skip the frosting. Take one or two a day for lunch until you run out (which will probably be one day if your kids find them- my dd loves to take these for lunch and is the envy of her class when she does. They are good at room temperature, too (obviously if they have meat in them they ought to be refrigerated)
You can do the same thing with cheese and garlic butter and ham or turkey if you want. You can also make little calzones or hand pies with anything you want- cheese and broccoli, cheese and ham, sautéed vegetables and chicken- so many options. Mini quiches breakfast burritos Pretty much all of that requires a lot of prep time on another day but then that day it's just grab and go.

Pasties, burger bombs (bread dough wrapped around fillings) burritos, French bread pizza soft cheese and pretzels, bagel sandwiches, wraps.

I worked out of my car before I went off on maternity leave, so I feel your pain! Sometimes it was so hard to eat right. I ended up doing a lot of "snacking". So, cheese and crackers, fruit, yogurt tubes or drinkable yogurt, nuts, cut veggies, hard boiled eggs, spinach croissants, etc.

Thanks Sarah for your user name we are probably doing similar work.
This week I was intentional about food and packed a lunch every day and tried to make it a variety.
