Cabbage also works well.

I don't think there is a hearty vegetable that wouldn't work.

I wouldn't try leaves, like spinach or kale, but everything else is fair game.

I like combining brussel sprouts, rutabaga (or turnip), potatoes (fingerling or regular, with skin), carrots and (I think) mushrooms, though I leave them whole or halved and *think* I add them near the end.
