dd13 chose to make mac and cheese in the instant pot, hot dogs (cut up in the mac or eaten on a bun), and roasted broccoli. I made salmon for dh and I and some parmesan zucchini chips.

I am trying to get the kids cooking this summer. dd15 made pizza muffins earlier this week.

Do you know that picture book, Alligator Pie, by Dennis Lee? I made a a casserole with a spinach layer when my oldest was little, and to entice her to eat it, my dh called it Alligator Pie. We've had several versions over the last few years, most recently my third called Spanakopita Alligator Pie. I was fresh out of ideas tonight so I tried out a new version of Alligator Pie on them. The bottom layer was ground beef seasoned with Cajun spices and cheddar cheese held together with an egg, a little mayo, and a couple dollops of Greek yogurt. The top was sauteed kale, eggs, and spices, topped with more cheddar. DH loved it. I had too much of the kale mixture to fit in the pan, so I made baked it separately in a muffin tin. It's more greens than egg, but I think it will still be a nice breakfast.
