Lentil Soup

This is a variation of a recipe I got from my sister. I love it

It is pretty inexpensive and fast to make so I thought I would share.

Lentil Soup

4 cups sliced carrots
1 medium-sized onion chopped
1-2 medium sized bell pepper(s)
Celery
3 tbs olive oil
Oregano
Garlic cloves
Salt
Pepper

Sautee vegetables in oil adding spices to taste

Pour in 4 cups crushed tomatoes with 5 cups water
Add 1 small bag lentils
Cook for a 1-1/2 to 2 hours until lentils are soft

Before serving add:
4 cups frozen spinach
Shredded cheese (optional)
Sour cream (optional)

Thanks for sharing! I've been wanting to try lentils but I'm kinda scared of them.

This sounds easy enough for me to make!

I have this cooking on the stove as we speak. It's smells like spaghetti bolognaise sauce. I'm going to blend it so it's smooth - my girls are more likely to eat it that way.
