This is SO yummy and a good dish for a crowd. My DH actually made this for me and my sister's family last Mother's Day. Everyone, including all our children (age 2-9) loved it!

Berry French Toast

2 cups frozen blueberries
1-1/2 cups frozen blackberries
1-1/2 cups frozen raspberries
¾ cup granulated sugar
1 tablespoon cornstarch
1 tsp. ground cinnamon
Cooking spray
1 cup fat-free milk
1 tsp. vanilla
4 large egg whites, lightly beaten
1 large egg, lightly beaten
1-8 oz. loaf French bread, cut into 1-inch slices
1 tablespoon granulated sugar
1 tablespoon powdered sugar

1. Preheat oven to 350.
2. Combine first 6 ingredients in a 13x9 baking dish coated with cooking spray.
3. Combine milk, vanilla, egg whites, and egg in a large, shallow baking dish, stirring well with a whisk. Add bread, turning to coat. Let stand 5 minutes, turning bread occasionally. Arrange bread in a single layer over berries. Sprinkle evenly with 1 tablespoon granulated sugar. Bake for 30 minutes or until golden brown and bubbly. Sprinkle evenly with powdered sugar. Yield: 6 servings.

I've been making my own granola for a couple of years now. The recipe I follow calls for Splenda, but if you're hesitant to use it, experiment with more molasses. If you're a lover of grains like I am, you don't really need much sweetness (which is why most of the commercial granolas are such overkill). I love that most of these ingredients can be bought in bulk, and there is so much fiber!

Granola

All seeds and nuts used are raw – unroasted and unsalted. Bulk foods are perfect for this stuff and you can purchase only the amount you need.

2 ½ cups rolled oats
1 cup sunflower seeds
½ cup sesame seeds
2/3 cup wheat germ
¾ cup flaked unsweetened coconut (in health food section, NOT in baking section!)
½ cup chopped walnuts
½ cup slivered almonds
½ cup wheat bran
¼ cup flax seed
1 tsp cinnamon
½ cup Splenda
¾ cup vanilla-flavored whey protein powder (expensive, but full of protein)
¼ tsp blackstrap molasses (use more if you are not using Splenda)
½ cup canola oil

Preheat oven to 250 degrees.

In a large, shallow roasting pan (like you would use for meat, not a cookie sheet – needs to have sides). Combine the rolled oats, sunflower seeds, sesame seeds, wheat germ, coconut, walnuts, almonds, bran, flax seed, cinnamon, Splenda, and protein powder, mixing very well.

Stir the molasses into the canola oil. It won’t really blend with it, but it will help the molasses get evenly distributed. Pour the mixture over the dry ingredients, and stir until it’s uniformly distributed.

Place in the oven and toast for an hour, stirring once or twice. Store in a tightly covered container.

Makes about 16 servings of ½ cup. Net carbs in a ½ cup serving are 15.8. Serving has 11.6 grams of protein.

Title: Whole wheat pancakes

Description:
These have a really yummy flavor. Even Del, who scoffs when I make whole wheat (lol), *loved* them.

Ingredients:
1/2 cup all purpose flour
1/2 cup whole wheat flour
2 tbsp sugar
1 tsp baking soda
1 egg
3/4 cup milk
2 tbsp oil

If desired, 1/2 cup chocolate chips

Directions:
Mix ingredients and cook.


You can also use all whole wheat, omitting the white (or even use all white flour). I've made it all 3 ways, and it's tasty either way.

this is unusual and REALLY GOOD!!!!

take a frying pan and melt some butter in it. add cut up banana and cook until the banana has a little bit of brown on it. add three beaten eggs and scramble them.

then you can serve it with corn tortillas and advocado and salt, or just toast.

there is a variation with ham and pineapple, but i prefer this and i make it for myself about once a month as a treat.

I'm soo not a morning person, I like never eat breakfast because I can't eat that early in the morning.. for DD is about 1/4 cup cheerios and 1/4 cup 1% organic milk.... if I'm really up to it 1/2 cut bannana.

this was our christmas lunch for the longest time! but it's all 'breakfast', but i LOVED it so I wanna pass it on

Farmer's Breakfast

1 roll of pork sausage
2lbs hashbrowns ('southern' or shredded
dozen eggs

fry pork sausage in a large frying pan, not in patties, it'll need to be broken up
DO NOT DRAIN
add the hashbrowns and cook like regular until they're browned.
add the 12 eggs and scramble together

all done! and SOO good

Dairy (casein) free "yogurt" pancakes

1 egg, lightly beaten
2/3 cup soy yogurt - we like blueberry or strawberry
2/3 cup vanilla soy, almond, or rice milk
3/4 cup whole wheat flour
1/4 tsp salt, or 2 tbsp maple syrup (for a sweeter version)

Mix together all of the ingredients and cook just like regular pancakes They're good served with fresh fruit!

I made this for Christmas morning breakfast and my family loved it. It's so easy and can be made the night before.

Sausage/Cheese Casserole
1 lb. bulk Pork Sausage ( I use Jimmy Dean)
4 eggs
8 oz pkg crescent rolls 3/4 cup milk
2 cups shredded cheese salt & pepper to taste

Brown, crumble and drain sausage. In 13 x 9 x 2 baking dish, grease bottom of dish. Spread crescent rolls in bottom and squeeze edges together to form a crust. Sprinkle sausage, then cheese on top of rolls.
Mix eggs, milk, salt & pepper together. Pour on top. Bake @ 425 in preheated oven for 20 minutes or more. Cool 5 minutes, then cut and serve while warm.
Yield : 8 servings
The recipe calls for mozzarella cheese but I always use sharp cheddar. This dish is also great leftover from the microwave.

Cream of Wheat, DS style. DS loves this...my mom made it up, and he expects her to make it when she's here or we're there. He loves it for breakfast, or before bed (or both). I like it, too, but when it wears off, it leaves me starving hungry, and doesn't hold me as long as other foods (which tells me it's pretty "sugary").

1/3c milk
1/3c water
3 Tbs farina cream of wheat (not the instant kind, or the kind with added salt)
applesauce
cinnamon
brown sugar

(I *think* those are the liquid & cream of wheat measurements...doing this from memory. It's the same as what's on the box recipe label.)

microwave or stove-top:
bring the milk & water to a boil (it can be all milk or all water, too)
stir in the cream of wheat
keep stirring until it thickens (every 10-20 seconds in the microwave or it boils over)

when it's done cooking,
add half the amount of applesauce as there is cream of wheat
add cinnamon & brown sugar, if you want

Makes 1 1/2-2 servings

Breakfast Tacos

Scramble eggs and a bit of salsa together in a skillet. I usually do one egg per person plus one for the pot. Add sour cream, cheese, or whatever else on hand that looks good. Serve in tortillas--I usually get the smallest for these, and do a quick heat-up in the skillet (pushing the eggs over to one side.) Hubby loves it. Kids eat it.

Default taco omelete

I used to hate omeletes - too much work. Then, I realized what I was missing out on, and I never use more than just that one pan - not even a cutting board! I do this by using whatever meat & fixin's are leftover from the night before! It works especially well the morning after you have tacos. It goes like this:

TACO OMELETES
Take the smallest frying pan you have and crack in two eggs, break the yolks to swirl in with the whites. Let cook on medium until bottom is well set (about 2 minutes on medium). FLIP THE WHOLE THIING OVER
On one half sprinkle taco meat, diced tomato, green onion, cheese (ending with cheese helps hold it together)
FOLD the other half over to form the omelete
Remove from heat and cover
In about two minutes, everything should be warm and melted!
Serve with a dollop of sour cream on top!
...Buenos Diaz!


This will work with just about anything...So far we've tried the following omeletes:
- chicken, broccoli, cheese
- salmon and creamcheese (mmm!)
- steak, potatoes and bell peppers
- even meatloaf and mashed potatoes!

NIGHT-BEFORE MONKEY BREAD
24 ounces frozen dinner roll dough
1 c. packed brown sugar
1 (3.4 ounce) package instant butterscotch pudding mix
1/4 c. white sugar
2 tsp ground cinnamon
1/2 c. melted butter

Grease and flour a standard-sized bundt pan. Mix brown sugar and pudding mix together and set aside. Mix white sugar and cinnamon together and set aside. Cut the dinner rolls in half or thirds. Place a layer in the bundt pan and cover with the brown sugar mix, then the cinnamon-sugar mix, and then about half of the butter. Repeat with another layer, which should finish off the dough. It will seem you are putting WAY too much sugar-y stuff in, but everything rises considerably so the sugar spreads out. Leave on the counter uncovered overnight. In the morning, preheat the oven to 350. Press down the dough so it fits in the pan again, then bake for 30 minutes. Serve by letting everyone break pieces off.

2 cups flour
