meatless, milkless main dishes?
for dinner.
Besides spaghetti. That my picky kids will eat. No tofu, no beans. Is there anything?

noodle and vegetable soup vegan pancakes or waffles Make my "yum sauce": 1 c. good quality cashews 3 c. water blend in the blender for a super long time. If there are any chunks, strain it through a coffee filter. Add 1 tsp of salt and 2 tbsp of corn starch. Cook over medium heat, stirring almost constantly, until it thickens (about 5 minutes). You can also add a few cubes of pureed sweet potatoes for color and it doesn't affect the flavor. (no more than 2 cubes for a recipe) Serve over noodles (it's similar to mac and cheese) or add basil for a creamy pesto. Serve over baked potatoes. Use as a base for cream of potato or cream of broccoli soup. Eat with chips as nachos. Spread on a tortilla for a fake quesadilla. Serve with rice. This sauce is a mainstay of our dinner menu. We've never tried it a way we haven't liked it. If the sauce tastes too much like cashews, then use a different brand next time. It's only good with really mild ones.

Chili w/cornbread (sub any dairy free milk for the cow milk in your usual recipe)

Ds is a tiny bit more open to trying new things. This morning I made steel cut oats as oatmeal and he ate it. With maple syrup. Dd would not even consider that.

Frittata with veggies they enjoy.
Pasta with veggies sauteed in olive oil and some garlic. Scrambled eggs and toast. Or any other breakfast egg. Soup - there are tons that fit your requirements. Lentils (dd likes lentil burgers) Fried rice. Veggie stir fry over rice, add seitan for some protein. Veggie fajitas. Veggie pitas. Egg salad. Hummus on pitas or anything really.

instant falafel. They don't need to know it used to be beans
lasagna made with tofu ricotta or lots of veggies eggplant slices, breaded and pan fried served on sandwiches or with pasta and read sauces My kids love sandwiches. we do grilled cheese with daiya. But, we do it all fancy because they love to make their own. So, pesto, cheese lots of veggies. I guess it is like a panini but we don't really press them. tonight we had root beer floats and tater tots because we rented a movie. we never get movies. Chili on anything rice, potatoes, taco salad, Indian Tacos, pasta, fritos, fries, tots, enchiladas...we really like chili. If your kids do not like beans you can try pureeing it a bit, sweetening it with brown sugar, or just using tvp or burger crumbles instead of beans.
