Freeze-ahead Cheesecake
Anyone got a good recipe for a cheesecake I can freeze ahead of time for a party? I usually make the unbaked kind but will try baked as well.
No limitations apart from US branded stuff that I can't get here, like Cool Whip or Jello pudding mix. I prefer 'from scratch' with real ingredients.

I made cheesecakes about 14 years ago for a Thanksgiving dinner that I made ahead and froze. They were really good. I wish I could remember the recipes I used. They were health recipes. I'm wondering if I got them from the LLL cookbook. Do you have access to that publication? Wish I could help you out better. I haven't made cheesecake since then after finding out shortly after that I had an adverse reaction to eggs.

I got a recipe from my sil, thanks Charla! It is white chocolate and raspberry cheesecake.
I usually do the unbaked ones so no eggs involved.

White Chocolate and Raspberry Cheesecake
Make base with 200 g digestive biscuits (or ginger nuts, oreos or shortbread) and 75g melted butter. Melt 300 g of white chocolate, beat 300 ml double cream, 250 g soft cheese (full-fat like philadelphia) and 250 g mascarpone cheese together. Spread half over the base and then sprinkle with 200 g raspberries (fresh or frozen) keeping a few for decoration. Spread the remaining mixture carefully over the raspberries, smooth and decorate with reserved berries and grated white chocolate if wanted. Chill for around 5 hours or overnight. I am assured that it freezes fine too. I did time and a half of the quantities and put it in a 9 x 13 pan.
