Banana Muffins
I love this recipe because I'm always looking for ways to not throw things away and this is a great way to use up bananas The lady that I got it from has a fb page also- Cat Can Cook- But I add my own twist too.
Banana Muffins (makes 12 muffins) 3 or 4 Large bananas, mashed (the more bananas the moister, so I use 4) 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet) 1 slightly beaten egg (I have experimented with adding an extra egg and that works well too) 1/3 cup melted margarine or butter 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1 1/2 cups flour *To the dry ingredients, I add about 1/2 a tsp of ground cinnamon and ground ginger. Mix the mashed banana, sugar, egg and margarine together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt, cinnamon, ginger and flour. Mix wet and dry ingredients all together! Pour into greased muffin tins, and bake in 350 degrees F oven for approximately 20 minutes. Enjoy! |

Seriously! I just made these today, they are so good! I think it is the ginger maybe? I have never had ginger in my banana bread before. I put chocolate chips in half the batch , this is my attempt to get ds1 to try them. |

I just put them in the oven..I'm sure they'll be great!! I added cinnamon, but couldn't find my ginger! oh well, the batter was greeeaaaat

Would self-raising flour instead of plain and the baking powder and soda work ok? I am over-run with bananas atm.

Marrae, I bet you could. I haven't tried but I will tell you that my liquid to dry ratio is a lil different every time because of the size or amount of bananas I use. So I don't think you'd have a problem there. If you've got bananas to use, this is a great way to do it <3 So good!
Oh goodness, I hadn't even thought about adding chocolate... That does sound good though!
