Well, yesterday my turkey bones were soft... So 4 days. Now, once the bones get soft like that, do you all crush them and still let the broth simmer?

personally, I don't do the pate thing since DH has consistently not eaten it and I can't think of creative ways to use it at the moment. So, if I know the bones are broken up, I'll let them to so more marrow and such gets into the broth - and after that I just toss.

Butcher gave me the 'dog bones' for making stock. I just unwrapped some to roast and broth. They still had hair on them. I'm guessing that will get burned in the 400 degree oven or strained when I boil them. Right?

I'm so excited! I did chicken broth for the first time last week and it was easypeasy and delicious. I made chicken & dumplings with it and it was the best I've ever had.
Now I've got beef going, from soup bones I picked up at the grocery

DH keeps forgetting to bring soup bones in from the shop so my last two batches of broth have been from t-bone steak leftovers.

The smell isn't as nauseating. It doesn't taste as rich and doesn't have that gelatin wobble, but the broth is a darker colour. I found that very interesting. I wonder if the tbones don't have as much marrow in them.

I did some beef broth, and left it simmering for days and forgot to add water to it for two days! All the water evaporated. I am so lucky I didn't start a fire |

I believe it, because I've done it! I got to it before ALL of the water evaporated, and ended up w/ some super thick and rich beef boullion that froze into super sticky, gel-like cubes.
