The good salads in my house are "build-your-own" because no one except me and dh want it all. So for a Cobb salad I set out lettuce, tomato, crumbled bacon, sliced hard-boiled eggs, avocado, feta cheese, and sliced grilled chicken. Tonight was Slow Cooker Jerk Chicken Tacos with Caribbean Salsa from the Skinnytaste Cookbook. The recipe in the link is close. The corn tortillas fell apart and made it messy to eat. Next time I'll serve it over rice.(eta or crunchy taco shells)

Do you all find that a certain brand of chicken is better and more tender? Even when I use my slow cooker, it seems like chicken is always tough lately.
