I need ideas. I started a thread in this forum but I will be checking here regularly.
Last night I had a roasted sweet potato topped with black beans, guacamole, red pepper flakes, and locally made cheese. It was delicious. My teen had Culver's. I want another sweet potato tonight just like last night's but I know my teen will want something different. Maybe I'll make him spaghetti and make my sweet potato dish again for myself. Friday night I went out with a friend and we had roasted beet salads topped with feta. They were so good. I bought a few beets yesterday. |

dd is taking us all out to eat. super sweet of her. but she is by far the most flush with spending money out of all of us.
So baked potatoes move to tomorrow.

Jumping on cause I need new ideas..
Tonight is chicken strips on the pannini press and mac & cheese. Tomorrow is eggs and sausage Tuesday is potato bar Wednesday is Pasta Thursday is chicken in milk adapted for the IP Friday is TBD based on what looks good at the meat market. |

Dd 19 made dinner last night. Not sure what to call it. It had glass noodles, chicken, cabbage, carrots & sauce. It turned out really yummy.

Veggie fajitas for days! Added mushrooms. Also made some breakfast sandwiches with zucchini bread buns, eggs, bacon, and cheese.

I think I may turn some of the baked potatoes into mashed potatoes. Ds and sh can eat it with some chicken sausage I bought (he can make that himself). What goes well with mashed potatoes for the vegetarian?
My people tend to get a little grumpy with too many leftover potatoes but thinking maybe I could do something fun with them (I do sometimes make "garage potatoes" - basically fry them up with onions and beans or whatever, sometimes a fried egg on top and those are popular. But just trying to branch out a little).
