Humorous to me that the last post in the thread was ME posting about fermented pickled beets...Now I'm wondering if I fermented some by accident
We had a jar of pickled beets & ate them all. Dh thought we could just add regular beets (canned) to the juice & they'd then taste pickled. I didn't think they tasted pickled, so suggested I should bring the juice to a boil...add the plain beets....cool to room temp & then put back in the jar. They taste "effervescent" to me. Do you think they fermented?? |

I'm fermenting some kraut right now for the first time, so just joining in this thread. I did tabascos this summer.

How great to find this thread here. I am a newbie to fermenting and recently put up a quart of saeurkraut and one of kimchi. Interestingly the kraut totally failed - it went slimy and off looking while the kimchi is delish. The only difference in prep was the kraut was chopped by hand and the chi in the food processor. I am thinking using the processor released more liquid from the vegies, keeping the chi moist while it fermented.

I'm making sauerkraut right now, just in a mason jar. Last time I did that I went too long b/c I was expecting it to be soft like store-bought, but apparently it will stay crisp.
My tabasco did really well, I plan to do it again this summer and also siracha (found a recipe in a magazine for that). I've done kombucha and milk kefir successfully this year, as well! |

I just discovered the world of fermentation and found this thread. Read through the entire thing (in multiple sittings, lol).
So far I've only done sauerkraut but it's so good! I am going to do dilly carrots and beets next. Anyone still fermenting?

Brenna, what do you have going now?
I finished my 1st batch of sauerkraut and its so delicious! My 2nd batch is still fermenting and just this afternoon i made a 3rd batch, along with a batch of dilly carrots.

Always kombucha. I have 5 heads of cabbage waiting for me to grate them I bought some dill for dilly carrots too

I am trying a quart with strawberries. Looks super easy. And my dd needs some probiotics and this looks more deliciuos (in her eyes) than fermented veggies so I figure it's worth a shot.

I love fermenting, we have done dilly carrotts, pickles, kraut, kimchi, ginger carrots, sourdough, kvass, water and milk kefir, yogurt. Right now we have taken a break. I hope to get back to it soon once we rule out histamine issues with fermented foods. It's so neat to have learned so much and also what a huge roll these ferments play in a healthy gut and body.
