DD1 made mac and cheese. Only help she required was using the broiler.
We had snow peas (raw) and broccoli (steamed) to go with it. Birthday cake for dessert. (Root Beer Float - a root beer cake layered with vanilla ice cream and smothered in frosting.)

Awhile back in a Costco thread Aerynne mentioned unbaked tortillas from Costo. I re-joined Costco after years away and bought those. WOW!!! Normally when we have burritos I don't have any tortillas. I just put my burrito ingredients on top of a big plate of greens and eat it as a salad. Tonight I had 3 of those tortillas. So fresh and delicious. And without all the unnecessary ingredients. DH cooked the tortillas on the grill. Super easy.
Last night was homemade pizza. Night before was lemon oregano chicken. chicken breasts marinated in lots of lemon juice, some olive oil, salt, fresh garlic, and lots of fresh oregano from the garden. Served with quinoa and salad. |

I'm trying a friend's recipe for Squash and Lentil Stew tonight because I asked her in a desperate rush for vegan recipes. She's one of the few vegans I know and my son's fiancée is coming to dinner tonight and she's a vegan.
Hopefully it comes out okay and everyone likes it!
