Monday I made up a creamy soup with potatoes, jalapenos, bacon and cheddar cheese.
Last night was orzo vegetable soup. Tonight I'm planning spicy tomato cream pasta with Greek salad.

New recipe tonight. Dairy free beef stroganoff with green beans. Served on jasmine rice for the kids. Served over zucchini noodles and smothered in cheese for my obviously not dairy free husband.

I made Sautéed Shredded Brussels Sprouts with Smoked Ham and Toasted Pecans and Crispy Rice with Ham and Bean Sprouts, only I used broccoli slaw instead of bean sprouts.

Tonight my plan is to try these Spicy California Shrimp Stacks, along with an asian green salad. I think most of my family (except DS ) is going to be SO excited because they love sushi and it's pretty similar.

Recipe is an interesting question because I often don't follow recipes. however, here is the recipe that I used as a base http://www.daringgourmet.com/2014/12...ef-stroganoff/
The recipe isn't df but I just made subs. I used some variances on the seasonings just due to what I had on hand and personal preferences. And at the end when the recipes adds cream cheese and sour cream I added coconut yogurt instead. I would have added coconut milk too had I wanted it creamier but I found this consistency to be fine.

Because of circumstances here, and me only having to feed myself, this week has been a lot of organic TV dinners, and things like homemade burgers and sandwiches.

Tried a few new recipes tonight.
Made crock pot bbq shredded beef served in hamburger buns. Corn on the side. For the kids. For the adults, I tried a new recipe, chicken shwarma, served over sauteed collard and onions with roasted broccoli and brussel sprouts. So amazingly delicious.

I don't have a recipe and I don't measure. I thinly sliced an English cucumber and seasoned the slices with salt, pepper and dill. I made a 1:1 mixture of vinegar and water to cover and refrigerated them for about an hour until we were ready to eat. They will be better tomorrow. They are pretty tart so if you don't like them that way, lessen the vinegar and add more water. You can use any seasoning you want! You could add onion slices also.
