I'm using leftover roast tonight to make grilled cheese and roast sandwiches. Sooooo good. I don't really like grilled cheese, but throw some roast beef inside and I do. Leftover baked beans and sliced veggies to go w/ .

We had sockeye salmon, sautéed tomatoes and zucchini noodles and a salad. Made up some mini pizzas to round out the meal for the kids.

Tonight we had the one pan autumn chicken dinner. I used the 10" x 15" Pyrex baking dish that was linked to on the sheet pan dinners thread. It was the perfect size.

Last night I did an oven baked one sheet pan dish. Chicken, asparagus, garlic, onion. Served over zucchini noodles.

Well, it's not a science since I just sort of threw it together and threw it in the oven and watched till it was done.
I started at 350 but then raised to 400 because I was hungry. I think it was probably about half hour or so...
