I'm using leftover roast tonight to make grilled cheese and roast sandwiches. Sooooo good. I don't really like grilled cheese, but throw some roast beef inside and I do.

Leftover baked beans and sliced veggies to go w/ .

We had sockeye salmon, sautéed tomatoes and zucchini noodles and a salad. Made up some mini pizzas to round out the meal for the kids.

Tonight we had the one pan autumn chicken dinner. I used the 10" x 15" Pyrex baking dish that was linked to on the sheet pan dinners thread. It was the perfect size.

Well, it's not a science since I just sort of threw it together and threw it in the oven and watched till it was done.

I started at 350 but then raised to 400 because I was hungry.

I think it was probably about half hour or so...

It was pretty good. Everyone liked it and it had far less prep than the chicken yakisoba; aside from marinating the meat earlier in the day, I prepared the meal in about 15 minutes. I have another beef and broccoli recipe that I prefer, though (this one), so I think next time I'd take the general idea of this recipe but use the other marinade and instructions. Basically make my preferred beef & broccoli recipe and serve it with ramen noodles instead of rice.
