I would like to add "Knitting in Plain English" by Maggie Righetti to the knitting In-print list. I had given up on being able to knit anything interesting, but after reading though this book, I knit a sock. And that is a verrrry big deal for me.

The same author has a crochet book too that is great as well. "Crocheting in Plain English"

A great resource for fiber arts (Knitting, Crocheting, spinning yarn) is Ravelry.
