Salsa chicken with bell peppers. I didn't have rice so we ate it with tortilla chips.

Last night we had baked potatoes with broccoli cheese sauce.

Tonight is hot roast beef sandwiches with cucumbers and soup.

Yesterday we had bbq ribs with cheesy scalloped potatoes, steamed carrots and spinach salad.

Bad timing because my biggest rib lover had a huge tooth extracted that day and was therefore unable to eat ribs. And my 3rd biggest rib lover got sick and also didn't eat. So we had leftover meat!

Which helped make today's dinner.

I made shepherds pie. With roasted veggies.

Vegetable Beef Soup and I'm trying some gluten free biscuits. I hope they turn out good. I haven't had much luck with gf biscuits so far.

Silvana's kitchen cook book has a great gf biscuits recipe. Have have fed them to non gf poeple and they love them.

We had veg beef soup tonight too! Out of the freezer, because it's been a long day and I had three or four bags of it in there. The bad thing about having an April baby is we're not going to be getting into our freezer meals until probably late May, when no one wants to eat soup even though soup is the very easiest thing to freeze ahead. Le sigh.

Cinnamon apple grilled cheese (Muenster, fried apples, cream cheese/cinnamon/sugar, and pecans+honey on cinnamon swirl bread) and chopped salads (spinach, cabbage, carrots, strawberries, craisins and sunflower seeds with sweet onion poppyseed dressing). Photos just for 2sunshines
