An idea I got from The Lazy Genius is to have categories and then 3-4 recipes/meals for each category. I think my winter categories will be: Pantry meals/fast meals (no time to prep nights) Soups/stews Sheet pan Bar meals (i.e burrito bar, baked potato bar, etc) Asian Friday night (dh cooks but I end up doing a lot, he always makes either chili or pizza) Then you plug in categories to days, a month at a time. Then you just plug in the recipes you have under the category. |

Re: What are you eating in October?
I try to plan 1 - 2 weeks at a time and things go so much better. I may see about doing a month at a time, especially as we're heading into the holiday season.

If you want the skewered version, this is also very good. It's not nearly as hot as the curry version. (She doesn't call for it here, but I use palm sugar, not white in the sauce. And only about half.)

Re: What are you eating in October?
We had mushroom soup. I puréed the mushrooms and fibbed to the kids. They ate. I thought it was divine.
Tonight we had rosemary roasted potatoes and chicken. Another favorite here.

Re: What are you eating in October?
Shepherd's pie with the meat, sauce and veggies in the crockpot all day. Just in the process of whipping up the potatoes to top it, adding some grated cheddar and putting it under the broiler for 5 minutes. I'll throw a salad together while the cheese is melting. Unless I specifically make extra, there will be no leftovers.

Tonight is chicken soft tacos. I need to find a no starch way to serve mine. Any ideas?
I had someone who was going to share a lentil pot pie recipe. Was it here?
