Last night we had satay chicken tray bake with root vegetables and brown rice.
Tonight is garlic and chilli beef stir fry. I'm overhauling all our meals as being diagnosed with another autoimmune issue means I am trying out an anti-inflammatory eating plan.

Tonight is tacos. Wiggle worm has her first inperson ballet class sience the first week of March. They devied her class in to 3 or 4 groups so that there are only 4 kids in each group and they will be recording the performance.

Enchiladas, rice and beans. Did yellow rice with turmeric because I didn't have the salsa I usually use to make Mexican rice. It was ok.

I'm jealous! Our ballet studio won't be doing in-person classes until at least September, and that's not even for sure. My kids had to record themselves dancing and all of those individual dances are being edited into the final Dance Concert.
We had Buffalo Chicken from the IP with lots of veggie garnishes, steamed broccoli, and rice. Secundus opened a bag of tortilla chips to scoop up her chicken and Littlest ended up making herself cheesy nachos. That kid doesn't eat anything I make. Dh came home from a meeting with a huge box of bananas (18 or so) so I made a double batch of Cinnamon Crunch Banana Bread for dessert. Maybe I can save a loaf for the freezer.

Oh and today was our stupidly cheap meal of the week. Something I've started because food prices are just so expensive these days.. we had oven roasted russet potatoes with a few hot dogs and asparagus (on sale .50) tossed in. Split a can of mandarins from our pandemic stash for dessert.
