Camping meals

We are going on our first camping trip in our new trailer over Memorial Day weekend. Actually, this is our first camping trip pretty much. I need meal suggestions, other than the typical hot dogs/hamburgers and sandwiches. I am gluten free, but no one else is. I can easily sub out for me, so I don't need GF suggestions necessarily. Naturally GF would be great.

We have a stove top and an oven in the trailer, but I would prefer not to use the oven. I do have a slow cooker that can travel. We have plenty of fridge space.

So far I have: Breakfasts: Eggs, breakfast meat, potatoes, toast; pancakes with breakfast meat; breakfast burritos (add fruit for the fruit eaters)

Lunches: Sandwiches/salad, fruit, cut up veggies;

Dinners: Hot dogs/hamburgers, some sort of potato, beans;

We do a lot of meat and veggie meals for dinner. Steak, chicken breast, brats, etc. Those we cook over the campfire on a grate. Then I bring my cast iron pan and throw whatever veggies in with a little olive oil -- asparagus, broccoli, green beans, onion, etc. That's our basic standard. Throw some washed fruit on the side and bam, happy children.

I also usually try to do some baking in advance to make the eating there easier. Things like muffins, banana bread, etc.

Lunches are usually easier -- cold sandwiches, mac and cheese, salad, etc.

For breakfast, we bring along our electric griddle and do eggs and sausages, omelates, pancakes, french toast, bacon, etc.

I came to look for the same thing! We are camping next week and I'm trying to come up with a menu.
I am planning on s'mores, grilled corn, hamburgers ect..I also found a quinoa salad recipe I want to try and thought it might be a good time

I always cook a mexican dish before going - like chicken & bean burrito mix. Then I just reheat it & we eat burritos.

We do a lot of like foil pack meals. basically some cut up meat (ground beef chicken et) some veggies (onions potatoes and what ever else fancies people) add a little butter or prefered "oil" toss onto a grill till cooked. Easy clean and simple way customize.
