I'm not veg, but I love vegetables and veg recipes.
My favorite is the Vegetarian Mothers' Cookbook.

Mine don't look pretty on the shelf anymore - I took them to Officeworks and had the spines cut off and replaced with spiral binding. It is FANTASTIC having cookbooks that lay flat when you're using them!

We're not completely vegetarian/vegan but almost all of my cookbooks are. I'll list them, and try to get a photo later.
Vegan Planet by Robin Robinson Vegetarian Classics by Jeanne Lemlin 366 ways to Pepare Rice, Beans and Grains (this one has suggestions for adding meat marked as notes at the end of some recipes, but the main recipes are vegetarian) by Andrea Chessman Moosewood Family Cooks at Home (this one calls itself vegetarian, but it does include some fish recipes) by the Moosewood Collective How to Cook Everything Vegetarian by Mark Bittman Vegetarian Express by Nava Atlas |

Re: Show us your vegetarian/vegan cookbooks!!!
Vegetarian Cooking for Everyone by Deborah Madison is my new favourite cookbook. It has the best salads & salad dressings in it. It uses a lot of 'real' food that I have in my fridge. The recipes are easy to follow, but are also classy eating.

Re: Show us your vegetarian/vegan cookbooks!!!
The Mediterranean Vegan Kitchen
I like it because it doesn't use any 'subs' - no fake meat, no tofu, no super 'exotic' ingredients. She wanted to present 'real' traditional recipes that happen to be vegan, rather than trying to 'veganize' recipes that had meat/fish/eggs/dairy. It *does* use LOTS of olive oil. It doesn't have any pictures (if that's important for you when you cook). It's somewhat repetitive. It's 'mostly' Italian focused, but doesn't overdo the pasta. |
