Default Anyone know anything about monkfruit?

It's a supposedly natural, low-calorie sweetener that is made into extracts and other products that people can use

monkfruit.org

I love dessert but I don't like artificial sweeteners (don't trust them) or stevia (it tastes gross). So this could be good if it is as good as they say, but I'm skeptical.

Anyone have any thoughts or experience?

I own it. I cannot imagine you ever using it as it's very spendy.

I like liquid stevia . I think it is now brand. Like a drop is enough.

I know it's spendy but if the extract is 200 times as sweet as sugar then it would last a long time, right? Even the powder that is 20 times as sweet as sugar, so it could be 20 times as expensive and it would net even. So you own it. Do you like it? What is it like?

I really can't stand stevia, unfortunately.

I will go look at bag. I think it says to use cup for cup for sugar!

I have bought ALL the substitutes for tasting. Can't do xylitol. Headache.

Different monk fruits are different for amount. Depends on how it is prepared.

I think it tastes better than stevia, but is not as sweet. As with stevia, the brand matters. Some brands are more concentrated and they do taste different.

Many of the products on the market are actually monk fruit blends, usually with erythritol. If it says it measures cup for cup like sugar, it's a blend. A tiny pinch of the concentrated extract will sweeten a drink, a teaspoon or two a whole batch of muffins. BUT sugar adds texture and holds moisture in baked goods, so you can't just substitute it based on the ratio chart. I've had the most success cutting the sugar back in a recipe and adding stevia or monkfruit to make up the sweetness difference, rather than cutting it out altogether. (My hubs and one of my kids still complain vociferously so I quit and only use those sweeteners for myself. Two of my kids don't really care or have adjusted to the difference, the others, not so much.)

i tried it, it had a kinda fruity flavour (a lot nicer thatn stevia to my way of thinking) but unfortunately the kind I got is not pure and has erythritol and when I contacted the company they said it was derived from corn so that makes it unusable for our family.

I really like it. I get a bitter taste from stevia and artificial sweeteners give me migraines.

I rarely use it though and haven't tried cooking with it.
