Super easy Swiss steak and it was sooo yummy!
Dumped two boxes of vegetable quinoa soup onto a roast. Let the crockpot do its magic for 10 hours and serve over hot egg noodles! |

We're having Crispy Rice with Ham and Bean Sprouts (only we don't like bean sprouts so I'm subbing broccoli slaw) and Sautéed Shredded Brussels Sprouts with Smoked Ham and Toasted Pecans.

We are having spinach and leek quiche for supper. If you have never tried using puff pastry as the crust for quiche, you totally should. I mean I know puff pastry is processed and terrible for you and probably full of unpronounceable ingredients but it tastes amazeballs. A thousand times better than regular pie crust.
Not sure what we will have with it... ETA: here's a pic from another time we had it

We had chicken and cheese quesadillas for dinner tonight. It was a quick on the go dinner because of busy schedules and everyone running in multiple directions.

Last night was burrito bowls.
Tonight it's just me. I'm thinking chicken with pepperjack cheese melted on top and sauteed veggies. But I actually have to get out of bed and cook it so we'll see what happens
