A variety of roasted vegetables (butternut squash, sweet potatoes, beets, summer squash) and some kind of skillet lime chicken. Maybe something Asian inspired. The two dishes don't exactly go together but I need to use these items up and I know my family will eat them. I may decide to grill the chicken.
I really want to make some healthier cookies for snacks, too. I'm going to make some kind of Italian pork chops with marinara and maybe some spinach mixed in over cheesy grits with a side of corn. Woah, didn't really think of it but that's a corn heavy meal. Hmm, maybe I'll see what other veggies I have in the freezer for a good side.

I feel tired of meal planning right now, but DD1 is coming home for the weekend so I had to suck it up.
Tonight we're having chicken pot pies and salad. Tomorrow we're trying Orzo Carbonara with Crispy Prosciutto and Burrata. Saturday is baked "fried" chicken sandwiches.
