and can i just say-- this thread has been awesome for me. we were in a serious *serious* eating rut. i needed something to help me, and this totally was it. i read through january and part of february and was inspired. i then stalked charla's pintrest and pinned a few things then i made a dinner chart and told the kids we were eating *real* food again. and to just deal with it but that if they did deal with it we would have a celebration and eat at a restaurant after 30 days.

we are 3 and a half weeks in and it is going great!!! there have only been 2 meals my super picky eater would not take her "mandatory" 5 bites (to get on the chart you have to eat a certain number of bites) otherwise the kids have done awesome and i am now able to figure out what meals the kids *really* don't like and can't eat versus the meals that they don't prefer, but will still eat.

oh and we have had 17 different meals in those 23 days!!!

Tonight we're having grilled steak, roasted baby potatoes, sauteed mushrooms for dh and I and green beans for everyone. I'll probably stir fry them. Sometimes I do them with bacon but I have none. Contemplating a couple drops of liquid smoke.

Green beans with kielbasa sausage, and "Devrey Potatoes" on the side. Devrey was a man at a church we used to go to a few years ago and he made the BEST potatoes that make a garlicky, creamy, parm sauce as they bake. I figured out how to recreate them a couple months ago and they've shown up quite a few times since then on our menu. The boys don't like them (they don't like potatoes), but that just leaves more for V, DH, and me!

Sure, but it is kind of hard to describe how to cut them. I'll try.

Ingredients, and how much I use of each:
5-7 Potatoes (Idaho works well)
2-3 tsp Salt
5-7+ cloves Garlic
1/2+ C Parmesan
1+ C Heavy whipping cream

First you peel the potatoes. Then you slice them like you were cutting rounds about 1/4-1/2" thick, but not all the way through the bottom. You want a the potato to stay together as one, just have big slices in it.

Put the potatoes nestled closely together in a foil lined glass pan (you want the depth - it could be a metal pan if deep enough - foil is for cleanup because of all the cheese/milk baked together makes a mess!). I use a pie plate since I use so few potatoes.

Finely chop up the garlic. Sprinkle salt on each potato, sprinkle the garlic. Pour the heavy whipping cream on top of the potatoes so it seeps down into the cuts. You want the cream to come up halfway on the potatoes, or more (another reason to use as small of a pan as possible). Top with lots of parm, making sure that some goes down into the milk too.

Bake at 350 for 30-40 minutes or whenever they are done. , I'm not good with how long. Haha. I just keep checking. The cream, garlic, and parm turn into a nice sauce while baking which we like to spoon on top of the potatoes when serving. So good!
