Re: What's for dinner in April?
Today I cooked the last of the turkeys I had stocked up on when they were on sale at Christmas time. Baked potatoes and steamed green bean/carrot mix.

Ground beef, rice, and green beans, seasoned with Greek vinaigrette (the little bit I had left!), olive oil, and homemade Greek seasoning mix.

Re: What's for dinner in April?
We had tacos tonight. Homemade refried beans, Spanish rice, chopped olives, chopped onions, and shredded cheese in tortillas. Everybody loves this meal here. They get to add all the toppings they want themselves.

Tonight is stir fry. I'll used leftover steak and broccoli from last night and add carrots, mushrooms, teriyaki sauce and rice noodles.

Re: What's for dinner in April?
It was fairly good. I didn't really like the flavor of the meatballs. I had leftovers today though for lunch and it seemed a little better. It looks amazing, but the flavor just wasn't right for me. But your tastebuds are probably different from mine so maybe try it and see what you think. Next time I think I'll just make meatballs with Italian seasonings instead of the cumin, paprika, etc. I think that would be fantastic.
