We like spinach lasagna (but don't make it often because dh doesn't like tomato-anything): http://broadhorizonsfood.blogspot.co...tils-rice.html

Broccoli Cheese Soup: http://crockpot365.blogspot.com/2008...eese-soup.html

I usually make beans (pinto or black) in the crockpot, then use them wherever I'd use canned beans

Lentils & Rice is yummy, cheap & super easy: http://broadhorizonsfood.blogspot.co...tils-rice.html

We love beans in the crockpot. I do up 32-48 oz of dried beans on Fridays, then we use them throughout the next week.

I put the dry beans in the crockpot, add enough water so that it's almost at the top, then dump in chili powder, seasoned salt, minced garlic and onions (we buy onions in bulk and chop and freeze them). I don't soak the beans beforehand.

Throughout the day, I'll add more water as needed, because I love bean water. I put it on high for 4-6 hours or low for 8-12 hours.

This weekend I also cut up a bunch of Honeycrisp apples. I cored them and got out the bruised areas but didn't peel them. I just broke them into smaller bits, dumped them into the crockpot with enough water to cover them (though next time I will do less water) and left them on low overnight. The next day, I took them out, put them into the blender and viola. Applesauce! The girls love it. Dh wants me to do up the next batch with some cinnamon and sugar.

I might actually start using my crockpot now that I'm home all day. I had used it a few times when I used to work, turning it on low in the morning before I left, and when we came home at night everythig was dry and gross. We even came home to a burnt crispy mess one day. Then I was too scared to use it

The secret to avoiding that is to have it about 3/4 full or to use a smaller crockpot. I found that out from GCM. After I'd burned something.

Thanks! That makes a lot of sense it's been a few years now, but if I remember correctly, the recipe I was following that ended up burnt definitely did not fill it up that much. Good to know

I don't buy canned Refried beans anymore. I make them in the crockpot. Cook as described above by Loralee. Only add garlic and cumin. Then when soft, mash with a potato mashed adding bean water as needed for preferred consistency. We usually get 3-4 meals worth from 1 lb of beans done this way. Side dish sized servings.

Yesterday I made Brunswick stew. My method:
-leftover shredded pork chopped
-leftover chicken thighs chopped
-one onion chopped
-two small potatoes peeled and cubed
-bottom of jar barbecue sauce
-bottom of bottle of Wircestershire sauce
-cup or two tomato product- I used pasta sauce on hand
-you might add corn or green beans too if you like them or have them. We have issues here--Dh doesn't like corn in anything while I don't like green beans in anything.

Cook on low until potatoes are soft. Adjust seasonings to taste.

I think that if we ate meat, we'd probably use the crockpot a lot more.

I should get my mom's recipe for gluten and make up some strips to add in to stews/soups.

And thanks, PIO. Glad to know someone thinks I'm a genius.
