I mistimed my dinner. I"m making pot roast in the IP. It's the first night of soccer practice. I put it in before we left. It's not quite done. I have to leave to pick up dd from work. dh will have the choice to add potatoes & carrots. Otherwise, just meat tonight. Oh well. I really dislike when I do this. So frustrating. I really try to have dinner ready for dh. Oh well, it'll still taste good.

Have I mentioned one of our favorite ways to eat zucchini?
Cut into rounds, dip in egg and then in a mixture of breadcrumbs, Parmesan, Italian seasoning, garlic powder and salt. Place on greased baking sheet and bake for 20 minute at 375 - then broil for a couple of minutes at the end to brown the tops. Dip in marinara sauce. Kind of a pain, but my whole family loves this. It's what we had last night with grilled porkchops. Speaking of grilling we also often grill potatoes instead of baking them. We slice them about 1/4 inch thick and DH brushes them with oil on the grill. I think he uses garlic salt or something on them too.
