I've got a book that Stepniack co-authored on the way. And I've tried a couple of sauces from the link Heather gave.

I find that I like the taste a lot more when it has tahini and lemon in it.

My allergic son won't touch it, but whatchagonnado?

I havent' made any in quite a while... and I have yet to try the hard cheeses, but I have a new container of tahini, so maybe this week..

See, what I need is an uncheese that doesn't include nutritional yeast, because that is ds' other allergy :/

I'm so glad I opened this thread! I don't usually hang out in the veg forum much. That cookbook is going on my wish list. Homemade block cheese substitutes would be wonderful for Lemur with his allergies.

I agree that something without nutritional yeast would be nice. No allergies to it here and it's good for that cheesy flavor but it gives certain people in my house the toots.

I think it's vegan. (not really informed on the nuances in vegan cooking). Here's the recipe I use just replacing the water with a can oc coconut milk.

I'm not a vegan expert, but I think it would depend on what kind of sweetener and chocolate you used, Camille. A lot of chocolates have milk solids in them, and regular sugar is not techincally vegan since it's bleached with animal products (bones, I think?). But it could easily be converted to vegan.

Punkie how about cashews. I've had cashew cheese and it's a bit cheesy.

You can make raw cheese and let it ferment a bit. I've done that before with both raw cashew and raw almond cheese. You just blend it really well and put it in cheesecloth. You can add rejuvalac to give it some good bacteria.

I made a mac 'n' cashew "cheese" last year. I thought it was pretty good, but my family was really grossed out by it I just threw up in my mouth as I typed that - mornings are not a good time for me to talk about food right now <rubbing my tummy>

We make ice cream every Friday night in the summer. We use the book "Vice Cream" for recipes and LOVE it.

I have several books with block cheese recipes. Usually, I just make a cheese sauce though, even meat-eating DH loves it
