It's incredibly creamy and yummy. My family is one of those that thinks soup should be chunky so they weren't as impressed, but still liked it over white rice. I would probably make it again, but not sure if I need to.

last of all is something that HummusDip planned and made when we were in Eugene. It was WAY good and I still think about it and how I need to make it, etc.

Honestly, that is my ALL-TIME favorite recipe, one I come back to over and over again. If I don't know what to do, I make burgers, these burgers.

I am TOTALLY making these soon... i'm out of spinach, though. Do you think I could use flax seeds instead of meal .. won't they get ground up ? I have almond meal, I think... I might use that instead.

Do you have a blender? If it's a decent one, you could probably grind the flax in it, turning it on high, or you could try a food processor.

I have made it all the time without spinach. Spinach adds no real texture or content besides vitamins, etc. It is kind of peripheral.

oh yeah, I totally forgot that! I remember trying to find a substitute for eggs,a nd flax was one of the substitutes I'm not a vegan or vegetarian, btw, I just love vegetarian cooking lol. (just in case you ever read my weightloss journaling )

so I made these today ! I had almost everything, but I forgot the onion (dh never eats them, so I never buy them), small amount of garlic b/c it upsets the baby's tummy. I also forgot soy sauce... so I added a little olive oil and sea salt. Mmmm they came out so well!

I am totallllllly drooling over these recipes. I need to figure out the points value so I can make these recipes! Right now I am keeping it simple (1/2 cup beans = 2 pts, 1/2 c. rice = 2 pts..1/4 avacado = 3 points.. 10 oz. baked potato = 4 points...salsa = 0 pts..etc.) but I am on the lookout for more recipes..
